When should I prune beet?
Remove damaged leaves throughout the growing season; trim tops at harvest. Snap or cut individual outer leaves at their base for greens, leaving the central crown untouched. At root harvest, twist or cut tops to about 2.5 cm (1 in) above the root to minimise moisture loss. No structural pruning is needed.
How often does beet need pruning?
As needed; once at harvest. Beet does not require pruning. Leaves can be harvested as a bonus salad green by removing a few outer leaves per plant without harming root development. Remove any yellowed or damaged foliage to keep the bed tidy and reduce disease pressure. Once tops are harvested for storage, cut them to about 2.5 cm (1 in) to prevent bleeding.
