Harvest buds spring–summer; cut back hard in autumn after fruiting. For harvest, cut the central bud first when tight and firm, which stimulates smaller side buds. In autumn, cut all stems to 2–3 inches above the crown and mulch heavily. In spring, remove surplus suckers, keeping the strongest 1–2 shoots per plant.

Bud harvest every few weeks in season; hard cut-back once annually in autumn. Globe artichoke needs two types of pruning: harvest flower buds before they open (cut the stem 3–4 inches below the bud), and cut the entire plant back hard to ground level in autumn after the last bud. Remove basal offsets (suckers) in spring, keeping only 1–2 strong shoots per crown.
