Begin harvesting lower leaves from late summer onward; best flavour after the first autumn frost; harvest through winter in mild climates. Harvesting little and often, from multiple plants in rotation, extends productivity far longer than a single heavy pick.

Every 1–2 weeks through the harvest season. Cavolo Nero (Tuscan black kale) is harvested by removing individual lower leaves progressively up the stem — this is the same action as pruning. Always leave the central growing tip intact. Regular lower-leaf removal keeps the plant productive through autumn and winter. Remove yellowing, damaged, or diseased leaves promptly to maintain vigour.
