Pinch flower stalks the moment they emerge; harvest outer leaves throughout the growing season. Snap or cut flower stalks at the base as soon as you spot them. For leaves, cut the outermost ones at the stem, leaving the central growing point intact to encourage regrowth.

As needed throughout the growing season (every few days during hot weather when bolting accelerates). Arugula needs regular harvesting rather than traditional pruning. Pinch off flower stalks (bolting stems) as soon as they appear to extend the edible leaf season. Once the plant fully bolts and flowers, leaves turn bitter and the plant is spent. Remove entire plants at season's end. Cut outer leaves continuously for a cut-and-come-again harvest.
