Beta is the genus behind beets, Swiss chard, and sugar beet — fast-growing edible crops suited to cool seasons in spring and autumn. All prefer full sun to light partial shade and consistently moist, fertile, well-drained soil with a slightly neutral pH; steady watering prevents woody roots and bolting. Toxicity varies across the genus: the ASPCA lists Beta vulgaris (beet and Swiss chard) as non-toxic to cats and dogs, but mature beet greens are notably high in oxalic acid.
